Fudge Brownies


I was making brownies this weekend to give away and I decided to try a slightly different recipe.  These brownies are chewy and delicious and definitely one of my new favorite recipes.


RECIPE #6 (from 10 Pounds of Chocolate Chips)  

Fudge Brownies

2 cups chocolate chips
1/2 cup butter
3/4 cup brown sugar
3/4 cup granulated sugar
4 eggs
1 1/2 teaspoons vanilla
1 cup flour
1 teaspoon unsweetened cocoa powder
1/2 teaspoon salt

In a pot over low heat melt butter and chocolate chips.  Add brown sugar and granulated sugar.  Cool.  Whisk in eggs and vanilla.  In a separate bowl whisk together flour, cocoa and salt.  Add to butter mixture.  

Spread into a 9x13 parchment lined pan.  Bake at 325 degrees for 45 minutes or until toothpick inserted near the center comes out almost clean.

When cool, remove brownie rectangle from pan.  Transfer to a cutting board and trim all of the edges.  (Save brownie trimmings for a separate recipe)

Cut brownies into desired size. Wrap each brownie separately in plastic wrap to store.  Brownies can also be frozen for several weeks.

It is tempting to eat the brownies straight away, but they are actually even better the next day.
