Pecan Blondies


I like to make these ahead of time and then wrap each brownie in plastic wrap.  They are easy to grab for picnics or a quick treat on the go.

They are dense, moist and the pecans add a wonderful crunch.  They are also delicious with macadamia nuts.







Pecan Blondies

1/2 cup butter
1 1/2 cups brown sugar
2 eggs
2 teaspoons vanilla
1 1/2 cups flour
1/2 t salt
1/4 t baking soda
1/2 cup white chocolate chips
1/2 cup coarsely chopped toasted pecans

Cream butter with brown sugar.  Add vanilla and continue mixing while adding the eggs.

In a separate bowl whisk together the flour, salt and baking soda.  Add to the butter mixture.

Stir in the chocolate chips and the pecans.

Spread into a prepared 9x9 pan.  Bake 350 degrees for 25 minutes or until a toothpick inserted in the center comes out clean.
