Mini Meringues
One of the best parts of baking is spending time in the kitchen together as a family working on projects.
My daughter recently made these mini meringue cookies and decorated them with cute little faces.
They make me smile.

Mini Meringues
2 large egg whites
1/2 cup sugar
food coloring - pink, black
In a bowl whisk the two egg whites until stiff. Slowly add sugar a spoonful at a time.
Prepare a cookie sheet with parchment.
In two small bowls add about 3 Tablespoons of the meringue. Add a small amount of black cake coloring to one of the bowls. Leave the other bowl white.
Add a few drops of red food coloring to the large bowl to create a light pink.
Spoon the pink meringue into a large plastic bag. Cut the tip off of one corner. Squeeze the meringue out of the bag onto a prepared parchment sheet. For each cookie use about 1 teaspoon of the meringue. (You could also spoon the meringue onto the cookie sheet, but using a plastic bag is sometimes faster)
Leave a small amount of meringue in the bowl to use for decorations. Add a few drops of red food coloring to tint this remaining meringue dark pink.
Put the dark pink meringue into a small plastic bag (snack size or sandwich size). Cut off one corner and squeeze the meringue onto the top of each cookie to make a cross (or bow).
Spoon the black meringue into a separate small plastic bag. Cut off the corner. Make two black eyes on each cookie.
Place the white meringue in a small plastic bag. Cut a very small corner from the bag. Squeeze small dots into the center of each eye and on the cheeks.
Bake meringues in a 225 degree oven for 30 to 40 minutes. Turn off the oven and leave the meringues inside. After about 15 minutes, carefully remove the cookie sheets from the oven and allow to cool.
