14. Walnut Snowball Cookies

Walnut Snowball Cookies from Bake Chocolate Cake - Countdown to Christmas

The secret to these cookies is toasting the walnuts and then chopping them into small pieces before adding them to the cookie dough.

The powdered sugar coating along with the crunch of the walnuts is delicious!












Walnut Snowball Cookies

1 cup butter
1 cup powdered sugar (plus 1/2 cup for coating)
1/4 teaspoon salt
1 Tablespoon water
1 Tablespoon vanilla
1 cup toasted walnuts, chopped
2 cups flour

Place the walnuts on a parchment lined cookie sheet and bake at 325 degrees until crisp (about 5 minutes).  Watch to make sure they do not burn!

Once the walnuts are cool then place them on a cutting board and chop into tiny pieces.

In a bowl combine butter, 1 cup powdered sugar, salt, water and vanilla.  Add the flour and mix until smooth.

Stir in the chopped walnuts.

At this point the dough can be placed in the refrigerator until ready to bake.

Ready to bake -

Powdered sugar can be messy so when forming the balls make them small enough to pop the entire cookie in your mouth.

On a parchment lined baking sheet place the small balls of cookie dough about 2 inches apart.  Bake 325 degrees for 14 minutes or until the edges are just beginning to turn brown.

Move the cookies to a rack to cool.

Place 1/2 cup powdered sugar in a large flat bowl or plate.  Once the cookies are cool then roll them in the powdered sugar to coat.
