Mini Ice-Cream Domes with Cherries from Bake Chocolate Cake
I love cherries during the summer and I thought it would be fun to make a cherry dessert. Unfortunately, the fresh cherries at the store did not look like they were at their best for the season.

I decided to use frozen cherries, along with a jar of Morello Cherries from Trader Joe's. I also used some of my favorite vanilla ice-cream.

These mini domes of ice-cream were molded in small metal bowls. This dessert could be made in a larger bowl and then sliced when ready to serve, but I think the individual servings are more interesting.

This dessert is extremely easy to make. It just requires planning a day ahead to allow time for the domes to freeze.

The flavors are intense, especially as the ice-cream melts and the sauce pools at the base of the dessert.

This is such a refreshing dessert on a hot summer day!

Mini Ice-Cream Domes with Cherries
Frozen or fresh cherries (I used dark, sweet, organic frozen cherries from Costco)
Trader Joe's Dark Morello Cherries (1 jar)
*Vanilla Ice-cream

Allow the ice-cream to soften and then scoop into a large bowl. Add half a bottle of Trader Joe's Dark Morello Cherries, along with about 1/3 of the juice. Stir together. Stir in about 2 cups frozen or fresh cherries.

Spoon the cherry ice-cream mixture into the mini bowls. Pour one tablespoon of the Morello Cherry Juice on top of the ice-cream in each bowl.

Cover the bowls and freeze overnight.

Ready to Serve
Pour hot water into a large bowl. Dip the small metal bowls of cherry ice-cream into the hot water for a few seconds. Remove and set the mini bowl on top of a towel on the counter. Take a small serving plate and place it upside down on top of the mini bowl. While holding onto the plate and mini bowl, flip the dome over. Carefully remove the bowl.

Spoon a combination of morello cherries, cherry juice and frozen cherries on top of each dome of ice-cream. (Add chocolate sauce, nuts and whipping cream if desired) Serve immediately.

*You'll notice in this recipe I did not give exact measurements.  This is because mini bowls are sometimes hard to find and I do not know what size you will be using.  The main thing is to add enough cherries and juice to the ice-cream to create a pink ice-cream and then have enough cherries and juice to pour over the top of each serving.
