Pecan Bars
I bought a large bag of pecans from Costco and I have been experimenting with a lot of different recipes.
I love this particular recipe because it is like eating a bite-size piece of pecan pie. Absolutely wonderful!
Pecan Bars
Crust
1 cup flour
1/4 teaspoon baking soda
1 teaspoon salt
1/3 cup brown sugar
1/4 cup butter
2 oz cream cheese
1/4 cup toasted pecans
Filling
4 Tablespoons butter, melted
1/2 cup brown sugar
1/3 cup corn syrup
2 teaspoons vanilla
1/4 teaspoon salt
1 egg
1 3/4 cups toasted pecans
In a bowl mix together the flour, baking soda, salt and sugar. Add the butter and cream cheese. Using fingertips, gently mix the dough. Add pecans.
Press dough into the bottom of a prepared 9x9 inch pan. Bake 350 degrees for 15 minutes.
Prepare filling. In a bowl stir together butter, sugar, corn syrup, salt and vanilla. Add 1 egg.
Pour filling over hot crust. Sprinkle the pecans on top and with a fork press down lightly so that part of the pecan goes into the filling. Return to the oven to bake for an additional 20 minutes.
Makes 16.
